Sticky Chicken & Spicy Rice; VIDEO

Alexander is 7 now, follow him as he cooks his own recipe of Sticky Chicken & Spicy Rice.









Alexander generally cooks as he sees fit now, he rarely measures as seen in this video.

In the future I will ask him to measure out his ingredients in order to help others watching.  This video was shot impromptu on a day he was cooking, so wasn't shot specifically for sharing.  He cooks weekly and hadn't until recently, wanted to be filmed.  He has asked to be filmed again and wants to share.

Equipment:


Meat mixing bowl
Chopping board
Chopping knife
Medium sized pot
Baking Tray
Aluminium foil
Wooden Spoon
Hob
Oven
Plate for serving knife and fork for eating!!!!

Ingredients:


3 Free Range Chicken Breasts
1 lemon
2 tablespoons of All-purpose seasoning
1 tablespoon of Jerk seasoning
Golden Syrup
1/2 cup of BBQ sauce

4 cups of long grain rice
2 cups of your favourite frozen vegetables
1 small onion
1/2 a sweet pepper/capsicum
1 sprig of fresh thyme
1 teaspoon of turmeric
1 knob of butter


How to:


Pre-heat your oven to 180oC/Gas mark 5
Wash your hands!!!  Bubbles means your hands are clean!

Cut the chicken into bite sized chunks, wash with lemon, then season rubbing the seasoning into the chicken ensuring all is covered.  You can leave this to marinate for a few hours or place directly on to a baking sheet, cover with foil and place into the oven for 45 mins.

Melt butter in a pot and add the finely chopped onions, sweet pepper and thyme.  When the onions are soft add a teaspoon of turmeric and mix.  Add your rice, water and a little rock salt to taste then cook till light and fluffy.

Note:- The general rule for cooking rice is to rinse well and add 2 cups of water to every cup of rice.  I usually pour in enough water that when I put my middle finger on top of the rice it comes up to the first line of my finger.  I then bring to a boil then turn right down to the lowest heat and leave to simmer until cooked, forking through every so often.  It has always worked for me and that is how I've taught the boys to cook rice.  We will shoot a video on cooking rice separately soon.

Serve with a side salad and eat!
